It is simple to make gnocchi with these ingredients: Potatoes and flour
You need a potato with a floury texture and minimum water content like Russet and Désirée potatoes.
Boil the potatoes with the skin and don’t pierce them during cooking so that they will not absorb too much water.
Mash them when they are still hot. There is no need to peel them as the skin will remain inside the potato ricer.
Use only enough flour to bring the dough together. It should be firm but slightly sticky. Make sure not to overcook.
