How to make penne rosa

A creamy tomato pasta with a kick! Penne Rosa is a 15 minute meal that is sure to please!

Noodles and Company makes a delicious pasta dish they call Penne Rosa. It was love at first bite and I knew it would be incredibly simple to make it at home. And bonus, at home you get to add more of the good stuff that restaurants always skimp out on to cut costs. That’s right, this recipe is even BETTER than Noodles and Co. And better yet, it takes just 15 minutes to whip this pasta up, making it a staple weeknight meal. It’s packed full of fresh ingredients like tomatoes, mushrooms, and spinach so you’re also getting your veggies in. This is a complete meal. Add some chicken if you’d like, but this is a meal we enjoy meatless.

INGREDIENTS:
:heavy_check_mark:1 pound penne pasta
:heavy_check_mark:1 tablespoon olive oil
:heavy_check_mark:8 ounces sliced mushrooms
:heavy_check_mark:2 cloves garlic crushed
:heavy_check_mark:1 1/2 cups marinara
:heavy_check_mark:1/4 to 1/2 teaspoon crushed red pepper flakes
:heavy_check_mark:4 roma tomatoes diced
:heavy_check_mark:3 cups fresh spinach leaves
:heavy_check_mark:1/2 cup heavy cream
:heavy_check_mark:salt and pepper to taste
:heavy_check_mark:1/2 cup shredded parmesan cheese

INSTRUCTIONS:

  1. Cook pasta according to package directions.
  2. Meanwhile, heat olive oil in a large skillet over medium-high heat. Add in sliced mushrooms and saute 3 minutes, until mushrooms are tender.
  3. Add in crushed garlic and let heat 1 minute.
  4. Stir in cooked pasta, marinara and crushed red pepper flakes.
  5. Pour in tomatoes and spinach. Stir to combine. Stir in heavy cream.
  6. Serve hot sprinkled with parmesan cheese.
