Mediterranean Goujons

This is how to make that boring potatoes or goujons into a great recipe. As long as you have the ingredients, you can do it anytime without the need of a special occasion.

4 sweet potatoes, peeled and cut into chunks
3 mixed peppers, roughly chopped
2 x packs Tesco Plant Chef Breaded Chicken or fish Goujons
220 g pack cherry tomatoes
50 g black pitted olives
1 tbsp olive oil
½ tsp dried oregano
pinch chilli flakes (optional)
onions (optional)
15 g basil, roughly chopped

Preheat the oven to gas 6, 200°C, fan 180°C. You can also use a skillet. Make sure to boil the potatoes before frying.
Add the sweet potatoes, peppers and goujons to a large roasting tin. Top with tomatoes and scatter with olives.
Drizzle over the oil and sprinkle with oregano and chilli flakes (optional). Stir to coat the goujons and vegetables.
When sautéing, add the oil first, sweet potatoes, goujons, peppers, tomatoes, when already cooked, put the olives, oregano, and onions then stir for one minute.
Scatter the basil and ready to serve with your favorite sauce!

I was wondering about goujons. I thought it is hard to find the ingredient. Though it is hard to prepare it This is I guess one of superb dishes that can be served at luxurious restaurants.

It is also about the preparation time. Though it is worth the effort. Served at fancy restos and can be anyone’s meal too.
