Spicy Spare ribs

This is a type of dish that you would be looking for. Spicy spare ribs is one of the best Chinese style recipe. It takes time to cook but the result with the right ingredients would make it perfect.

500 grams pork spareribs, cut into pieces
3 tablespoons dark soy sauce
2 tablespoon hoisin sauce
1⁄2 cup chicken stock
2 tablespoons caster sugar
1 star anise, broken into pieces
1⁄2 teaspoon cracked black pepper
2 teaspoons fish sauce
2 sliced onions
2 teaspoons minced ginger
3 sliced onion leeks
2 sliced chili
Stir fried spinach
Stir fried Napa cabbage (optional)

Blanch the pork spare ribs in boiling water for a few minutes to remove the excess fat. Remove from the pan.
In a pan, mix the soy and hoisin sauces, stock, sugar, star-anise, pepper, fish sauce and ginger. After the desired thickness of sauce, add the blanched pork and simmer gently for 50-60 minutes or until the meat is tender and the sauce has become think and the meat is richly glazed. Add the chili and onions, cook for another minute.
Sprinkle with onion leeks and serve with and stir-fried spinach or Napa cabbage.
