Here is another way to experiment that spinach veggie. The measurement depends on how you use the sauce. These are the ingredients and make sure to add more spinach as it will satisfy your buds.
200 g baby spinach, washed
2 garlic clove
1 onion, diced
60 g pack fresh coriander, roughly chopped
30 g fresh mint, leaves picked
3-4 green chillies, chopped
2 cardamom pod, seeds removed and crushed
2 tsp ground cumin
200 ml extra-virgin olive oil
2 tbsp sherry or cider vinegar
Put all the ingredients in a blender and blitz to a fairly smooth paste.
Add 100 ml water and some seasoning.
Blitz until very smooth then add another 1 tbsp water if necessary.
Cover and chill in the fridge for up to 5 days.
