Menudo, also known as pancita (“little stomach”) or mole de panza, is a Mexican tripe soup that features cow stomach—dubbed “honeycomb tripe” because of its resemblance to the hexagonal patterning of a honeycomb—in a broth flavored with onions, lime, and oregano and fortified with a guajillo chile sauce.
